Did You Know? You Can Use a Can of Pumpkin in a Cake Mix instead of Eggs & Oil.

I consider myself a pro at lowering calories in recipes, but this one was new to me.  Did you know.....you can substitute a can of pumpkin instead of using eggs and oil?  It is supposed to taste the same as if you were to use the oil and eggs. What a wonderful way to cut the calories.  I can't wait to try it out.

I would really like to try this on some unsuspecting guest to see if they could tell the difference.  I think that is the true test when you have no clue that the recipe is altered until after you've tried it.

Since it was yucky outside this weekend I thought I would take advantage of having my mom around and have her show me again the basics of crocheting.  As you can see the dog and the baby won out.  They were getting the full lesson while I took pictures.

Snow: Part Two!

I've not posted in a while because we had another round of snow.  This is very unusual for our area to get two snow storms in a season.  I stayed with my mom over the weekend and when I saw this ginormous snowman I had to take his picture.  Who knows how they stacked the other layers, but you can see he is leaning a little bit.  To get the full picture of how big he is.....look at him compared to the stop sign next to him.
